Ingredients
- Broccoli- 2 cups (blanched)
- Green beans – 6-8
- Carrot – 1 med
- Cabbage – 1/2 cup
- Onion – 1/2 chopped
- Cucumber- 1/2
- Tomatoes- 2 big
- Ginger + garlic (grated) – 1 tsp
- Green chilli – 1
- Tej patta – 1
- Black pepper- 2-3 crushed
- Cloves – 2-3 (crushed or whole)
- Boiled multigrain pasta – 1/2 cup (20 grams)
- Butter – 1 tsp (you can use oil as per your dietitian advise)
- Salt to taste
- Coriander leaves chopped
Method
Heat butter in a pan, add tej patta, pepper and cloves. Add ginger garlic and green chilli, sauté for few secs. Add chopped onion and sauté for 1 min. Add all vegetables and sauté for 4-5 mins. Add salt and tomatoes, cook until messy. Add 3 cups vegetable stock or hot water, mix well, cover it with a lid and cook for 15-20 mins (depending on consistency you like). Add boiled multigrain pasta and coriander leaves. Serve hot. You can add lemon juice as per your taste.
